The drought continued in California during the 2021 growing season. While yields were slightly reduced, there were no major heat spikes during the growing season allowing the small berried clusters to mature slowly and evenly, developing depth of flavors, balanced acidity and great tannin structure. Bud break occurred the first couple of weeks in April, and we saw fifty percent veraison by early August and harvested the majority of the vineyard after the autumn equinox. An exceptional year for consistency and quality, offering elegant and sophisticated final flavors in the wines.
The 2021 Kashmir Cabernet delivers on all fronts. Harmony and grace define this wine from aromatics to finish. Intense aromas of fresh black currant, pomegranate and blueberry preserve meld with lifted aromas of blood orange, tea spice, graphite, anise and espresso bean. The Estate’s hallmark of violets and rock sing through this wine. The palate is both opulent and balanced; delivering luscious fruit, savory complexity, verve, tension and a breathtaking finish. All in all, a “wow” wine representing the best of Moon Mountain District Cabernet Sauvignon. This wine will age perfectly over the next two decades.
